This week, Australia's very own cooking heartthrob, Tobie Puttock, sheds some light on what's cooking in his kitchen.

Q. What dishes are in your repertoire?
A.
Well I've been cooking for a living for 15 years so I have a couple. My favourite thing to cook is fresh pasta and braised meats.

Q. What's your secret food indulgence?
A.
It's no secret, I have a massive sweet tooth. Chocolate for sure.

Q. Have you ever eaten with anyone famous?
A.
Yes, I had dinner with Prince Andrew at Fifteen in London with my wife, Georgia and one other person. He's really nice and, as expected, was very interesting to talk to.

Q. What's your favourite health food?
A.
Hmmmm. Some say chocolate is healthy.

Q. What food couldn't you live without?
A.
Chocolate, Promite, girolles and truffles.

Q. What's your favourite Friday night meal?
A.
Pizza or a bar meal at Fifteen Melbourne with my wife, Georgia.

Q. If you could eat only one meal a day for the rest of your life what would it be?
A.
Osso bucco tortellini.

If you could have five foods on a dessert island, what would they be?
A.
The osso bucco tortellini on the menu at Fifteen Melbourne at the moment, bread, forrest mushrooms, pasta and chocolate.

Q. Friends drop by unexpectedly. What would you serve them?
A.
This has happened to me before in a big way. I was having a couple of friends around on a lovely summer afternoon as I had a lovely alba truffle and wanted to showcase it. The wife then asked a couple of her friends to come around for a drink and they insisted they would have some takeaway as I didn't have enough truffle for everyone. I couldn't have them eating takeaway while I ate handrolled tagliatelle with truffle so I cooked from the fridge. I always have garlic, bread and good olive oil so I made a huge bowl of tagliatelle aglio olio for everyone. It's quick, delicious and not a bother to make.

Q. For a romantic night out, what's on the menu?
A.
Flash food helps for romance, but I think it's all about the atmosphere. I would make something simple like grilled fish and Georgia loves roasted potatoes. For the health thing, we would have to have some greens like cavalo nero or even brussel sprouts. But then candles and some Candoli Brothers in the speakers always helps.

Q. Favourite aisle at the supermarket?
A.
That aisle with things like CDs, extension cords and bits and pieces.

Q. Favourite restaurant?
A.
I have two. DeKas in Amsterdam and a restaurant I went to recently in Paris called Petrelle. It only seats about 30 people, has one waiter, one chef and a resident cat. Food is simple yet complex in flavour and the atmosphere is really great.

Q. What dish do you wish you could cook really well?
A.
Not a dish of sorts, but I focus on Italian cuisine and would love to learn more about other cuisines like Middle Eastern and Japanese.

Q. What sort of food do you eat when you're stressed with a deadline?
A.
Whatever's closest. In my kitchen at work, that's normally salted cod.

Q. Have you ever put on a dud dinner party?
A.
For sure. When I first started cooking, I had eight friends and four courses and ended up in the kitchen for the entire evening.

Q. Do you think food and wine matching is over-rated?
A.
Not at all. My best mate Matt Skinner is genius at it and when someone knows what they are doing, it can be an amazing experience.

Q. What food would you quite happily never eat again?
A.
Squid. I'm allergic to it. Q. What's one ingredient you always have in your pantry?
A.
Olive oil.

Q. If you could invite three famous people to a dinner party, who would they be?
A.
Matt Skinner, Jamie Oliver and Gennaro Contaldo. They are all mates and I would be guaranteed a super fun evening.
