Wills and Kate serving up biscuit cake at wedding

The cake is often a crucial decision in the wedding planning process, but Prince William and soon-to-be-wife Kate Middleton have made it a bit easier for themselves by deciding on two cakes.

One will be the more traditional multi-tiered fruitcake, decorated with fresh fruit and flowers. But the other is one of the Prince's favourite treats: a cake made from rich tea biscuits and melted chocolate, among other things, which is set in the fridge or freezer rather than baked, the UK's Daily Mail reported.

Kate has had a large part to play in the design of the decorations for the fruitcake, directing Leicestershire-based cake-designer Fiona Cairns to include a floral theme incorporating the four nations — a rose for England, Scottish thistle, Welsh daffodil and Irish shamrock.

"She knew very much what she wanted and she brought us mood boards and told us what influences she would like us to use on the cake," Cairns said.

"The cake is multi-tiered, doesn't have colour — it's cream and white [icing] — and it's a traditional cake but also quite delicate and modern. All the tiers will have a different theme."

The 600 guests at the wedding breakfast will also get a chance to taste one of Prince William's favourite childhood treats: the McVitie's chocolate biscuit cake. The biscuit company's cake design and development head chef, Paul Courtney, is thrilled at the task he has been assigned.

"It's an unbaked cake and it will be made in a test bakery where we develop new products as our factory lines are too big," Courtney said.

"It has a couple of secret ingredients we can't tell you about but it will have dark chocolate, to give it a really nice flavour, and use rich tea biscuits that will be broken up."

There are many different variations of the fridge-cake, but here's one that has celebrity chef Nigella Lawson's stamp of approval.

Ingredients:
110g margarine or butter
300g chocolate
400g tin sweetened condensed milk
Large packet of McVitie's Rich Tea or digestives biscuits (or half of each)
Optional: 15 glacé cherries, chopped
56g raisins
variety of chopped nuts

Method:
Crush the biscuits. There are various methods: you can use a food processor, put the biscuits in a bowl and crush them using a jar or can, or put them in a plastic bag and bash them with a rolling pin or similar.

Place the crushed biscuits, cherries, fruit and nuts (if using them) in a large bowl and mix together.

Melt the butter, sweetened condensed milk and half of the chocolate in a saucepan over low to medium heat.

Pour the chocolate mixture over the biscuit mix and stir until they are well combined.

Line a tin, bowl or even box with greaseproof or baking paper and pour the mix into it. Freeze for at least two hours. Take it out of the freezer at least two hours before serving.

Before serving, melt the other half of the chocolate and spread over the top of the cake before cutting into squares and serving.
