Watercress Pick tips into sprigs. Store in a crushproof container or a bag tied with the air in it to prevent crushing.
Coriander Pick tips into sprigs. Reserve stem and roots for Asian soups and curry pastes.
Basil Pick leaves and handle carefully, do not crush or wet. Slice or tear just before use. Basil is very sensitive to cold and the leaves are sensitive to water. Stalks of basil can be added to bottles of vinegar or olive oil.
Mint Pick leaves and discard stem. Do not cut until needed or mint will discolour.
Parsley Wash and pick leaves. Reserve stems for stocks.
Baby spinach leaves Wash and sort through to remove foreign matter. Trim stems.
Mesclun Wash and sort through, removing any foreign matter. Trim leaves to remove discoloured patches.
Bean shoots Wash and pick straggly root end to discard.
