Curtis Stone's curried butternut pumpkin lentils with yoghurt
Ingredients
3⁄4 cup plain flour
3⁄4 cup self-raising flour
100g cold butter, diced
3-4 tablespoons icy water
1 teaspoon lemon juice
Preparation method
1. Place flours, a pinch salt and butter in a food processor and Pulse until mixture is crumbly. With machine running, add combined water and lemon juice. Process just until dough begins to form on the blade.
2. Turn out onto a clean, dry surface. Knead gently and shape into a flat, thick pancake. Wrap in plastic. Chill at least 20 minutes before using.
