Steak sandwich with olive relish

Ingredients

  • 4 minute steaks
  • 1 sourdough baguette, cut crosswise into four pieces
  • Butter
  • 60g baby rocket leaves
  • 2 medium tomatoes, thinly sliced

Olive and onion relish

  • 150g pitted kalamata olives, roughly chopped
  • 1 small red onion, finely diced
  • 1 tablespoon chopped fresh herbs (basil, oregano, rosemary)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar

Preparation method

1. For the relish, combine olives, onion, herbs, oil and vinegar. Season with salt and black pepper.

2. Preheat barbecue or char-grill. Season steaks on both sides with black pepper.
Lightly brush with oil. Cook the steaks over moderately high heat for 30 seconds
each side or until cooked to your liking. Allow to rest.

3. Slit open baguette pieces to make buns. Spread lightly with butter. Top with rocket and tomatoes. Cut each steak into wide strips and arrange on baguettes. Serve with the relish.
Tip:To achieve a tender result, cook the steaks on a very hot grill, then allow them to rest, covered with foil, for about 5- 10 minutes before slicing.
