Ingredients
125g butter, melted and cooled
½ cup sugar
60g egg, beaten lightly
¾ cup milk
1½ cups plain flour
1 tablespoon baking powder
½ teaspoon ground cinamon
¼ teaspoon salt
1 ½ cups peeled and diced Granny Smith or Golden Delicious apples
½ cup sultanas
Topping
¼ cup finely chopped walnuts
¼ cup sugar
½ teaspoon ground cinamon
Preparation method
Preheat oven to 200°C.
Butter 12 x ½-cup size muffin tins or use non-stick muffin tins.
In a large bowl, combine the melted butter, sugar, beaten egg and milk. Sift in the flour, baking powder, cinnamon and salt and stir gently until just combined. The mixture shoud be lumpy, not smooth.
Fold in the diced apple and sultanas, then spoon the mixture into the muffin tins until two-thirds full. Combine the topping ingredients and sprinkle over the muffins.
Bake in a pre-heated oven for 15-20 minutes or until they are lightly browned.
