Broad beans with artichokes
Buffalo mozzarella, raw artichoke and salsa verde

Ingredients
1 cup couscous
170g jar quartered & marinated artichoke hearts
2 tablespoons chopped basil leaves
2 teaspoons grated lemon zest
1 cucumber, peeled and diced
1 green capsicum, diced
3 roma tomatoes, seeded and cut into large dice
8 semi-dried tomatoes, sliced
60g small black olives
Baby basil leaves or parsley, to garnish
Preparation method
1. Place couscous in a bowl. Add 1 cup boiling water and stir to combine. Cover; stand for 10 minutes. Fork through mixture to separate grains.
2. Drain artichokes, reserving marinade. Add basil and zest to marinade and stir through couscous; season to taste with black pepper.
3. Transfer couscous to a shallow serving platter. Top with artichokes, cucumber, capsicum, tomatoes and olives. Lightly mix to combine. Serve garnished with extra basil.
