Ingredients
150g butter
3 bananas
1/2 cup white sugar
1/2 cup brown sugar
1 tsp vanilla esscence
2 large eggs
1/2 cup milk
2 cups self-raising flour
Preparation method
Melt butter in a large saucepan until liquid then remove from heat.
Mash bananas thoroughly until no chuncks. Pour into saucepan with both sugars, vanilla esscence and eggs. Beat with a whisk until all ingredients are well blended.
Stir in the milk and mix in. Add the flour and mix thoroughly.
Bake in a large loaf tin well coated with non-stick spray.
Bake at 180 degrees (170 degrees fan forced) for 40-50 minutes. Stand for 5 minutes then move onto cooling rack.
