Ingredients
420g can four bean mix, rinsed and drained
1 stick celery, thinly sliced
1⁄2 small red capsicum, diced
2 tablespoons finely chopped flat-leaf parsley
11⁄2 tablespoons white or red wine vinegar
2 teaspoons honey or brown sugar
2 teaspoons olive oil
Preparation method
Place all ingredients in a bowl. Season with lots of black pepper. Toss well to combine. Serve chilled or at room temperature.
Serve with wholemeal pita and sliced tomatoes.
