Ingredients
3 large potatoes, peeled, halved, cooked
1½ cups (about 250g) finely chopped cooked corned beef
5 green onions (shallots), sliced
¼ cup (60ml) olive oil
500g cabbage, finely shredded
½ cup (125ml) chicken stock
Preparation method
Cool cooked potatoes and grate coarsely into a medium-sized bowl. Add corned beef and green onion and season with pepper. Combine well. Using 1/3-cup measures, form mixture into patties. Set aside.
Heat 1 tablespoon of oil in a large saucepan on high. Add cabbage, tossing to coat well. Mix in stock and a good grinding of pepper. Cook for 5 minutes, covered, until just tender.
Meanwhile, heat remaining oil in a large frying pan on medium. Cook patties for
3-4 minutes each side, until golden. Serve patties with braised cabbage.
