Chilli, lime and garlic beef

Ingredients

  • ½ tablespoon peanut oil
  • 2 cloves garlic, finely chopped
  • 1 small knob of ginger, peeled and finely chopped
  • 2 small red chillies, finely chopped
  • 240g beef scotch fillet, quite thinly sliced
  • 1 teaspoon sesame oil
  • 1 onion, finely sliced
  • ½ green capsicum, chopped
  • 3 spears asparagus, woody ends trimmed, chopped
  • 3 spring onions, chopped
  • 2 kaffir lime leaves, very finely sliced

Preparation method

Heat the peanut oil in a wok or frying pan over a high heat. Add the garlic,
ginger and chilli and stir-fry for about 30 seconds. Add the beef and stir-fry for
4 minutes.

Keep the ingredients moving to stop the garlic and chilli burning. Remove
everything from the pan and add the sesame oil.

Still over a high heat, add the onion and capsicum and stir-fry for about a minute.
Add the asparagus and spring onions and cook for a further minute.

Finally, add the kaffir lime leaves and the beef and stir briefly just to warm the beef.

Divide between two warmed bowls and serve straight away.
