Ingredients
600g grass-fed beef rump or fillet, cut into bite-size chunks
2 cloves garlic, crushed
1 tsp ground coriander
1 tsp dried oregano
1 tsp smoked paprika
1 tsp ground cumin
Juice of 2 limes
1 tbsp olive oil
1 red capsicum, cut into bite-size pieces
1 green capsicum, cut into bite-size pieces
Preparation method
1 Place beef, garlic, coriander, oregano, paprika, cumin, lime juice, olive oil and a pinch each of sea salt and black pepper in a bowl. Mix well to coat meat, making sure to rub spices in, then place in fridge and allow to marinate for at least 1hr.
2 Thread meat and capsicum alternately onto skewers, beginning and ending with capsicum. Heat barbecue hotplate to high heat and cook skewers on each side for 10mins or done to your liking. Serve with Green Dressing.
