Ingredients
700g heart-smart or premium beef mince
1⁄3 cup soft wholegrain breadcrumbs
1 egg white
2 teaspoons Moroccan seasoning
1⁄4 cup chopped coriander
Olive oil spray
120g packet spring salad leaves
1⁄2 cup fresh snow pea sprouts, trimmed
1 carrot, shaved into ribbons
200g tub 98% fat-free tzatziki dip ,to serve
Preparation method
1. Place mince, breadcrumbs, egg white, seasoning and coriander in a bowl; season with salt and black pepper. Mix well using wet hands. Shape about 1⁄3 cup mixture into a thick sausage on each of 8 skewers.
Chill for 10 minutes.
2. Preheat a barbecue hotplate or char-grill to moderate. Lightly spray skewers with oil. Cook for 8-10 minutes, turning often, until tender and brown.
3. Divide salad between plates, make nests of sprouts and carrot. Top with skewers. Serve with tzatziki.
It’s worth paying a little more for lean mince to reduce saturated fat. For best results, use metal or thick wooden skewers; soak wooden ones in water for at least 10 minutes before using. Cook skewers on the barbecue, oven-grill, char-grill or in a frying pan. Use a vegie peeler to shave carrot into ribbons.
