Ingredients
2 x 425g cans boysenberries in syrup, well drained
3 eggs
2 tablespoons caster sugar
3⁄4 cup milk
2 teaspoons vanilla extract
1⁄4 cup plain flour
2 tablespoons flaked almonds
Sifted icing sugar, to garnish
Bought pouring custard, to serve
Preparation method
1. Preheat oven to 180°C/160°C fan forced. Lightly grease a 20cm (base measurement) pie dish. Scatter berries in dish.
2. Whisk together eggs and sugar until frothy. Add milk and vanilla; whisk to combine. Sift flour over egg mixture; gradually whisk into eggs to make a thin batter. Strain mixture through a sieve into a jug; pour over fruit. Sprinkle with almonds.
3. Bake for 30-35 minutes until set in the middle and the sides are well risen and puffed. Allow to cool slightly; dust with icing sugar. Serve in wedges with custard.
Best served warm from the oven. You can substitute 2 cups frozen mixed berries (drain well and pat dry on paper towels before using) or 2 cups fresh mixed berries for the canned berries.
