Choc berry triffle

Ingredients

  • 85g packet quick-set strawberry and raspberry flavour jelly crystals
  • 350g packet (2) choc sponge layers
  • 1 punnet strawberries, halved
  • 500ml vanilla lite pouring custard
  • 30g flakey chocolate bar

Preparation method

1. Make up jelly as packet directs; pour into a 16x26cm baking pan. Chill for 1 hour until set. Cut into 2cm cubes.

2. Cut sponge layers into 2cm-thick slices, then into chunks. Place pieces around base and sides of a 7-cup capacity glass serving bowl. Layer remaining cake with jelly cubes, berries and custard, using all ingredients.

3. Cover; chill 11⁄2-2 hours to allow flavours to mingle. Break flake into shards; sprinkle over trifle just before serving.
Buy unfilled sponge layers or use a 500g cream-filled chocolate sponge roll. Trifle can be assembled in individual glasses: use 250g packet chocolate cream-filled rollettes, cut small to fit in glasses. For shavings, use a vegie peeler on a block of room temperature chocolate.
