Ingredients
4 large eggs
1 teaspoon vanilla essence
1⁄2 teaspoon each finely grated lemon, lime and orange zest
1⁄4 cup caster sugar
23⁄4 cups hot low-fat milk
Fresh berries and icing sugar, to serve (optional)
Preparation method
1. Preheat oven to 160°C/140°C fan forced. Lightly butter a shallow 5 cup-capacity, 5cm-deep baking dish.
2. Place eggs, essence, zest and sugar in a medium mixing bowl and whisk to combine. Add hot milk gradually, whisking to combine. Pour mixture into dish.
3. Place dish in a deep roasting pan; pour boiling water into pan to halfway up sides of dish. Bake 35-40 minutes until just set. Remove dish from water; stand 5 minutes before serving. Sprinkle servings with berries and dust with icing sugar if you like.
For traditional baked custard, omit zest and sprinkle custard with ground nutmeg before baking. To heat milk, microwave in a glass or plastic jug on HIGH (100%) in 20-second bursts, stirring between bursts, until hot. To serve custard cold, cool completely, cover with plastic wrap and chill for at least 3 hours.
