Ingredients
4 flour tortillas
1 cup (260g) hummus
100g mixed salad leaves
1 carrot, grated
½ green capsicum, cut into thin strips
2 tomatoes, diced
½ cup (100g) ricotta
½ bunch chives, finely chopped
2 celery stalks, cut into 10cm lengths
Preparation method
1. Place tortillas on a flat surface. Spread over hummus and top with salad leaves, carrot, capsicum and tomato. Roll up tightly to enclose filling and cut in half. Wrap in plastic wrap and a napkin and tie with string, if you like, then pack into lunch box.
2. In a small bowl, mix ricotta with chives. Spread a little ricotta down centre of each piece of celery. Pack celery into lunch box with each tortilla.
Tip 1: Tortillas are available at most supermarkets and make a welcome change from sliced bread for packed lunches
