Citrus cheesecake with passionfruit topping

Ingredients
60g butter, chopped
½ cup flour
1 teaspoon salt
3 eggs
1¼ cups finely grated cheddar cheese
½ cup chopped parsley
½ cup chopped chervil
1 bunch chives, snipped
2 tablespoons chopped tarragon
oil for deep frying
tomato relish, to serve
Preparation method
MAKES 20
Combine butter and ½ cup water in a saucepan. Heat on low until butter melts. Bring to boiling point (do not boil).
Sift flour and salt together onto a piece of baking paper. Add to water mixture all at once, stirring to combine. Cook, stirring, 1 minute, until mixture leaves the sides of the saucepan and forms a ball around the spoon. Remove from heat. Transfer mixture to bowl. Cool slightly.
Using an electric mixer, add eggs one at a time, beating well after each addition, until thick, smooth and glossy. Stir in cheese and herbs. Season to taste.
Heat oil in a heavy-based saucepan, until a cube of bread sizzles as soon as it is added. Using two dessertspoons, scoop mixture and push off spoon into the hot oil. Cook in batches for 3-4 minutes, until puffed and golden all over. Drain on paper towel. Serve hot with relish.
