Ingredients
200g grated tasty cheese or Mexican style shredded
1⁄4 cup chopped coriander
2 tablespoons finely chopped, sliced, pickled jalapenos
250g packet (10) mini tortillas, warmed
Spreadable butter or margarine
Preparation method
1. Preheat a medium non-stick frying pan over moderate heat. Place cheese, coriander and jalapenos in a bowl; lightly mix to combine.
2. For each quesadilla, place a tortilla on a flat surface; sprinkle evenly with cheese mixture. Lightly spread another tortilla with 1⁄2 teaspoon butter; place, butter up, on cheese.
3. Place stack, butter down, in pan. Cook for 25-30 seconds until golden on bottom. Spread top of stack with more butter; flip stack over in pan. Cook until golden and cheese is melted. Remove quesadilla to a board; cut into quarters. Serve immediately.
Separate tortillas carefully after warming them as packet directs. Jalapenos are hot; a little goes a long way. Delicious dipped into Salsa Cruda as an appetiser, and served with beer or margaritas.
