Ingredients
310ml bottle seedless cherries in syrup
3 teaspoons cornflour
1-2 tablespoons orange marmalade, to taste
3 eggs
11⁄4 cups milk
1⁄2 teaspoon vanilla essence
4 muffins, split, or 4 slices bread, cut 2cm thick
11⁄2 tablespoons unsalted butter
Icing sugar, for dusting (optional)
Preparation method
1. Drain cherries through a sieve placed over a small saucepan. Set cherries aside. Dissolve cornflour in syrup using a whisk. Add marmalade. Bring to the boil, stirring constantly, until marmalade melts and sauce is thick and clear. Remove pan from heat; stir in cherries.
2. Whisk eggs, milk and vanilla in a medium shallow dish until blended. Add half the muffins at a time and soak for 1-2 minutes, turning once, until they absorb the egg mixture.
3. Melt half the butter in a large non-stick frying pan over moderate heat. Cook half the muffins for 2-3 minutes, until golden on both sides. Transfer to a plate; keep warm. Repeat with remaining butter and muffins. Dust muffins with sifted sugar. Serve with warm cherry sauce.
Garnish with mascarpone or thick cream if you like.
