Ingredients
3 chicken breasts skinless around 200g each, sliced into thin slices
2 tsp rice flour
1/2 tsp sesame oil
2 cloves fresh garlic crushed
10 gr fresh grated ginger
2 tblsp vegetable oil
1 bunch spring onions cut into batons
6 fresh shitake (or button) mushrooms sliced
1 tblsp honey
1 tblsp soy sauce
1 tsp thick dark soy sauce
2 tblsp oyster sauce
Splash of chinese wine or sherry
75 mls chicken stock
freshly ground pepper
1 tsp sesame seeds for garnish
Preparation method
Marinate the sliced chicken breast in the sesame oil, rice flour, garlic and ginger for approximately 1 hour.
Heat oil in wok or large pan and saute the sliced chicken until brown in 2 batches, remove from pan.
Add a little more oil to pan, add the spring onion and mushrooms and saute till beginning to glaze, then remove form pan.
Splash in the wine or sherry into the wok, add the sauces , honey and stock, bring to boil and simmer for about 2 minutes.
Add the sliced chicken and simmer gently for 2-3 minute.
Season with some black pepper and lastly add in the sauteed mushrooms and the spring onions.
To serve:
Serve over steamed rice and sprinkle sesame seeds on top.
