Ingredients

Old El Paso Soft Taco Kit
600g chicken thigh fillets, cubed
1 medium carrot, grated
1 spring onion, finely chopped
1 cup parsley leaves
140g mixed lettuce leaves
1/3 cup light sour cream
oil for pan frying or BBQ
Preparation method
Coat 600g cubed chicken thigh fillet in taco seasoning mix. Thread onto 10 wooden skewers. Cook on an oiled bbq or pan for 8 minutes or until chicken is golden brown. Combine carrot, spring onion and parsley.
Open tortilla pack, discard freshness sachet. Microwave 10 tortillas in pouch on HIGH/ 850 watts/100% for 45 seconds* or remove from pouch, wrap in foil and heat in the oven at 180°C for 10 minutes.
Place mixed lettuce leaves onto warmed tortillas, chicken (skewer removed) and carrot salad. Top with sour cream and Old El Paso Mild Mexican sauce.
Handy Hints:
Soak wooden skewers in water for 10 minutes before use to prevent wood burning.
