Ingredients
4 bacon rashers, quartered
6 slices of crusty Italian-style bread, toasted
cos lettuce leaves
750g chicken breasts, cooked, cut into bite-size pieces
250g cherry tomatoes, quartered
4 green onions (shallots), chopped
Basil mayonnaise
1 garlic clove, crushed
½ cup loosely packed basil leaves
1 small egg
1 tablespoon lemon juice
½ cup (125ml) olive oil
Preparation method
Cook bacon in a frying pan on high heat, until crisp. Drain on paper towel and tear apart.
To make basil mayonnaise, place garlic, basil, egg and lemon juice in a food processor and pulse to combine. While motor is running, add oil in a slow stream and blend until thick. Season to taste.
Top toasted bread with lettuce, chicken, tomato and bacon. Season to taste and drizzle with ½ cup basil mayonnaise. Serve topped with green onion.
