Ingredients
½ cup dark soy sauce
2 tablespoons mirin
3 teaspoons brown sugar
400g chicken thigh fillets, cubed
1 zucchini, sliced into 1cm thick rounds
1 capsicum, seeded, chopped
4 eshallots, peeled, halved
8 bamboo skewers, soaked
steamed rice, salad leaves, to serve
Preparation method
In a small saucepan, combine soy, mirin and sugar. Stir over medium heat for 1-2 minutes, until sugar dissolves and mixture is boiling. Reduce heat to low and simmer 2-3 minutes. Set half aside (for serving).
Thread chicken and vegetables alternately onto skewers. Brush with half remaining sauce. Arrange on an oiled foil-lined tray.
Preheat grill to medium. Grill skewers 8-10 minutes, turning and basting with remaining sauce halfway through cooking.
Serve skewers with steamed rice, reserved sauce and salad leaves.
TOP TIP
These can also be cooked on the barbecue or an oiled char-grill pan, turning and basting with sauce during cooking.
