Fragrant chicken curry
Ingredients
Cucumber and lettuce raita
1 tablespoon vegetable oil
1 onion, halved and thinly sliced
2 teaspoons chopped garlic
2 teaspoons chopped ginger
1⁄2 teaspoon chopped red chilli
425g can diced tomatoes
500-600g Lilydale Farms free-range skinless thigh fillets, cubed
2 teaspoons garam masala
1⁄2 cup low-fat natural yogurt, plus extra to serve
400g pkt tandoori naan, warmed, to serve
Preparation method
Preparation: 5 minutes
Cooking: About 15 minutes
1. Prepare raita as recipe directs; chill.
2. Heat oil in a frying pan over moderate heat. Cook onion 3 minutes until soft. Add garlic, ginger and chilli to pan and cook, stirring, until fragrant. Add tomatoes and 1⁄2 cup water. Bring to the boil, then simmer 2 minutes.
3. Add chicken and garam masala. Cover and simmer 6-8 minutes until chicken is just tender. Gradually stir in yogurt but do not boil. Serve on a bed of raita, with bread and extra yoghurt.
TIPS:
To save time with curries and stir-fries, keep jars of prepared chopped garlic, ginger and chillies in the fridge.
