Lemon chicken drumsticks with citrus chilli salt

Ingredients
8-10 chicken drumsticks, skin removed (or use Lovely Legs)
11⁄2 cups natural low fat yogurt
2 tablespoons bought tandoori paste, to taste
Juice of 1 lemon
Butter lettuce and shaved cucumber, to serve
Lemon wedges, to serve
Preparation method
1. Cut 3 slits in meaty end of drumsticks; place in a large food storage bag. Combine yogurt, paste and juice; add to bag, seal, expelling air. Massage chicken in bag until well coated. Refrigerate 3 hours or overnight.
2. Preheat barbecue or oven-grill to moderate. Drain chicken well. Cook 8-10cmfrom the heat, turning occasionally, for 15-20 minutes until juices run clear and edges are charred. Arrange lettuce and cucumber on serving platter; top with chicken. Serve with lemon wedges.
Add one or 2 drops red and yellow food colour to the marinade, if you like. Cook chicken on rack in baking dish in a preheated 220°C/200° fan forced oven, 30 minutes until tender and charred at edges.
