Ingredients

  • 2 medium (250g) witlof
  • 1 (170g) smoked chicken breast, sliced thinly
  • 1/2 cup (150g) cranberry sauce
  • 2 tablespoons chopped roasted walnuts
  • 2 tablespoons finely chopped fresh chives

Preparation method

1. Cut the end off the witlof and separate the leaves, discarding the large outer leaves. Wash and dry the leaves.

2. Just before serving, divide chicken between the leaves; top each with a teaspoon of cranberry sauce. Sprinkle with the walnuts and chives.

Not suitable to freeze.
