Chickpea, mushroom and spinach curry

Ingredients
1 small red or yellow capsicum, cut into 2cm squares
1 Lebanese cucumber, quartered lengthwise, cut into 2cm chunks
200g grape tomatoes, halved
1 tablespoon finely diced red onion (optional)
80-100g feta cheese, cubed
8 kalamata olives, drained and pitted
1⁄2 of a 400g can chickpeas, rinsed and drained
1 tablespoon finely chopped parsley or mint
1-2 tablespoons favourite Italian or Greek salad dressing
Wholemeal pita, to serve
Preparation method
Combine vegetables, cheese, olives and chickpeas in a bowl; add parsley and toss to combine. Pack into container with salad dressing. Wrap pita separately.
Wrap pita separately to keep it dry. Individual serves of salad dressing are available at major supermarkets.
