- 1 egg, lightly beaten
- 2 tablespoons canned corn kernels, drained
- Few chopped chives (optional)
- 2 slices wholegrain or mixed seed bread, toasted
- Spreadable light cream cheese
Preheat a small frying pan over moderately low heat; lightly spray with oil. Whisk egg, adding corn and chives; cook until scrambled. Spread toast with a little cream cheese; sandwich with egg mixture. Wrap in lunch wrap. Go!
