Ingredients

  • Cooking oil spray
  • 1 egg, lightly beaten
  • 2 tablespoons canned corn kernels, drained
  • Few chopped chives (optional)
  • 2 slices wholegrain or mixed seed bread, toasted
  • Spreadable light cream cheese

Preparation method

Preheat a small frying pan over moderately low heat; lightly spray with oil. Whisk egg, adding corn and chives; cook until scrambled. Spread toast with a little cream cheese; sandwich with egg mixture. Wrap in lunch wrap. Go!
Boost the vitamins – add thinly sliced tomato or serve with orange juice.
