Ingredients

  • ½ pawpaw or mango, sliced
  • 1 small red onion, thinly sliced
  • 1 red or yellow capsicum, sliced
  • ½ telegraph cucumber, thinly sliced in long strips
  • 2 long mild chillies, deseeded and finely chopped
  • Pepper to taste
  • 3-4 Tbsp fish sauce
  • 4 tsp sugar
  • 4 defrosted Sealord Simply Natural Fillets (Hoki or Dory are suitable)
  • Oil for grilling
  • Handful of fresh coriander
  • Handful of roasted peanuts

Preparation method

1. Combine the prepared pawpaw/mango with the red onion, yellow capsicum and the cucumber.

2. In a small bowl combine the chillies with the fish sauce, sugar and pepper to taste.

3. Heat the grill, place fish on a foil-lined oiled baking tray and cook for 1-2 minutes each side.

4. Fish should be cooked through.

5. Place the fruit mixture on each plate, top with the cooked fish and drizzle with dressing.

6. Garnish with peanuts and fresh coriander.

Tip: To thaw the Dory, place sealed bag in a sink of water for 10-15 minutes.
