Arrange fish in a microwave-safe dish. Combine onion, ginger, garlic and chilli; scatter over fillets. Stir together soy sauce, vinegar and sesame oil; add the sugar and black pepper to taste. Drizzle over fillets.
Cover fish with paper towels. Cook on HIGH (100%) for 5-6 minutes until flesh flakes easily when tested with a fork. Set aside, covered.
Heat peanut oil in a microwave-safe jug for 1 minute until quite hot; pour over fillets. Serve fish with dish juices. Garnish with coriander and lime.
Delicious with jasmine rice or salad of baby Asian leaves.
