Quince paste ham

Ingredients

  • 9-10kg cooked leg ham
  • Whole cloves
  • 150g quince paste, chopped
  • 1 cup dry white wine
  • Freshly ground pepper

Preparation method

Preheat the overn to 180C (160C fan-forced).

Remove the skin from the ham (set aside for storing the ham, if desired). Score the fat lightly in a diamind pattern, about 3cm apart.

To make the glaze, combine quince paste, wine and pepper ina small pan, simmer for 2 minutes or until thickened slightly. Place the ham on a wire rack in a large baking dish, with about 0.5cm of water in the base.

Cover the shank end of the ham, tightly with foil. Brush the ham well with the glaze.

Bake for 40 minutes, then remove the ham and stud with the cloves in the centre of each diamond.

Bake for a further 40 minutes or until ham is browned, brushing occasionally with the glaze during cooking.
