Ingredients
125g pkt Basco Gluten Free Macaroni & Cheese
2 tablespoons margarine or butter
1⁄2 cup milk
200g shaved ham, roughly chopped
1 bunch fresh asparagus or broccolini, cut into 4cm lengths
3 green onions, sliced
375g tub smooth light ricotta
2 eggs, lightly beaten
1⁄2 cup shredded low-fat mozzarella or tasty cheese
Mixed salad leaves and tomatoes, to serve
Preparation method
1. Preheat oven to 180°C/160°C fan-forced. Prepare pasta and sauce as directed on the pack, using margarine, milk and 11⁄4 cups water. Remove from the heat. Combine with ham, asparagus, onion, ricotta and eggs.
2. Spoon into a 5-6 cup round Pyrex casserole dish. Sprinkle with mozzarella. Bake for 35-40 minutes until cooked and golden. Serve with salad and tomatoes.
TIPS:
A 350g tub low-fat cottage cheese can be used in place of the ricotta, if you like.
