Crepes with lemon ricotta

Ingredients
2 lemons, one juiced, one sliced
1 bunch oregano, trimmed
¼ cup olive oil
4-6 frenched lovely legs (or drumsticks)
GREEK SALAD
1 baby cos lettuce, washed, leaves separated
125g cherry tomatoes, halved
½ small red onion, sliced
½ Lebanese cucumber, sliced
¼ cup black olives
50g feta cheese, crumbled
DRESSING:
¼ cup olive oil
2 tablespoons red-wine vinegar
1 tablespoon chopped parsley
1 garlic clove, crushed
Preparation method
Preheat oven to moderate, 180°C .
In a large bowl, combine lemon juice and slices, oregano and oil. Season to taste.
Add chicken. Coat well. Cover and chill 1 hour.
Arrange chicken and lemon slices in a baking dish. Pour marinade over. Bake for 45-50 minutes, until juices run clear when tested with a skewer. Cool before packing to transport. Keep chilled.
GREEK SALAD:
In a large bowl, combine lettuce, tomatoes, onion, cucumber and olives.
DRESSING:
In a small screw-top jar, whisk together all ingredients. Season to taste.
Transport salad, feta and dressing separately. When ready to serve, sprinkle salad with feta and drizzle dressing over.
TOP TIP
Dry lettuce well before combining it with the other salad ingredients. Use a paper towel or salad spinner.
