Nikki's lentil bolognaise

Ingredients
- 1 tablespoon olive oil
- 1½ cups dried green/brown lentils, rinsed
- 2 brown onions, chopped
- 4 cloves of garlic, chopped
- 1 carrot, diced
- 1 red capsicum, diced
- 8-10 small mushrooms, sliced
- 10 black pitted olives
- 4 tablespoons dried oregano
- 4 tablespoons dried thyme
- 2 small cans diced tomatoes
- ½ cup tomato paste
- 2 cups red wine
- 1 cup vegetable stock
- salt and pepper, to taste
- spaghetti, made as per instructions on the packet
Preparation method
Sauté onions and garlic in a tablespoon of olive oil until soft. Add lentils and mix. Add all other ingredients and simmer for approximately 1 to 1½ hours or until the sauce has thickened and lentils have cooked.
Serve over hot spaghetti and enjoy!
