Ingredients
2 cups basco gluten free multipurpose baking mix
2 tablespoons butter or margarine
1 egg
225g gluten-free sausage mince
2 tablespoons tomato sauce
1⁄2 cup frozen peas
1 egg yolk, beaten, to glaze
Preparation method
1. Preheat oven to 180°C/160°C fan-forced. Lightly grease a baking tray.
2. Place baking mix in a large bowl. Rub in butter with fingertips until mixture resembles fine breadcrumbs. Add egg beaten with 3 tablespoons water. Mix with a knife to make a soft dough. Turn out on a surface lightly dusted with extra baking mix. Knead until smooth. Roll out half the pastry between sheets of baking paper to form a 30x18cm rectangle, 3mm thick. Trim ragged edges.
3. Combine mince, tomato sauce and peas. Shape into 2 x 30cm logs. Place one log along one long edge of pastry. Roll pastry over log to enclose. Trim excess pastry and ends. Repeat with remaining pastry and filling.
4. Glaze rolls with egg yolk. Cut crosswise into 5cm lengths. Place on prepared tray. Bake 15 minutes until cooked and golden. Serve warm.
