Ingredients
2 tablespoons peanut oil
2 green onions, sliced
1 long red chilli, chopped
2 garlic cloves, chopped
1 teaspoon grated ginger
750g mussels, scrubbed,
beards removed
¼ cup oyster sauce
2 tablespoons light soy sauce
2 teaspoons sugar
½ cup fish stock
¼ cup coriander leaves
steamed rice, to serve
Preparation method
Heat oil in a wok or large frying pan on high. Stir-fry onion, chilli, garlic and ginger 1 minute, until fragrant.
Add mussels, sauces and sugar and stir-fry 1 minute. Pour stock over. Cover
and steam mussels 2-3 minutes until shells open (see tip).
Scatter with coriander leaves and accompany with steamed rice.
TOP TIP
Any unopened mussels should not be discarded as they are still fine to eat (despite previous concerns that suggested otherwise). The tendon connecting the shells simply needs to be slit with a small sharp knife to open the mussel.
