Ingredients
2 small pears
1 sheet frozen butter puff pastry, just thawed
1 egg, beaten, to glaze
4 tablespoons bought toffee or thick caramel dessert sauce, plus extra, to glaze
Mascarpone or thick cream, to serve
Preparation method
1. Heat oven to 210°C/190°C fan forced. Line a baking tray with baking paper.
2. Peel, then halve the pears – through the stems, leaving them attached – and core pears. Cut each half into thin slices not quite through to stem.
3. Cut 4 circles from pastry to fit the fruit. Place on prepared tray; lightly brush with egg to glaze. Place 1 tablespoon toffee on centre of each circle and spread slightly. Top with a pear half and fan out the slices. Lightly brush pear with extra toffee.
4. Bake for 15-20 minutes or until pear is tender and pastry puffed and golden. Serve warm with mascarpone.
Choose firm-ripe pears with pretty stems. Use a saucer or cardboard cut-out as template for pastry circles. You can also cut pastry freehand into pear shapes about 1.5cm bigger than the fruit. Work quickly with just-thawed pastry.
