Cinnamon crunch plum crumble

Ingredients

  • 800g-1kg ripe plums, halved and stoned
  • 1⁄4 cup golden syrup or honey
  • 1⁄2 cup rolled oats
  • 1⁄3 cup plain flour
  • 1⁄4 cup raw or demerara sugar
  • 1⁄2 teaspoon ground cinnamon
  • 50g cold butter, diced
  • 1⁄4 cup flaked almonds
  • Ice-cream or custard, to serve

Preparation method

1. Preheat oven to 200°C/180°C fan forced. Arrange plums, cut-side up and snug in one layer in a baking dish. Drizzle half the syrup over; bake 10 minutes.

2. Meanwhile, combine oats, flour, sugar and cinnamon in a bowl. Rub butter through mixture using fingers to make coarse crumbs. Stir through almonds. Sprinkle mixture evenly over plums. Drizzle with remaining syrup.

3. Bake 15 minutes more, until topping is crisp and golden. Serve warm with ice-cream or custard.
Depending on size of the fruit, buy 8 large or 12 small plums to serve 4. You’ll need a 20cm baking dish, about 4cm deep.
