Ingredients
600g pork mince
100g creamy feta, finely crumbled
1⁄2 cup chopped flat-leaf parsley
1⁄2 cup soft breadcrumbs
2 teaspoons fennel seeds, bruised
1 clove garlic, crushed
Olive oil spray
4 wholemeal or multigrain seed rolls, split, toasted
Butter lettuce leaves and thin red onion rings, to serve
1⁄2 cup (80g) bottled char-grilled red capsicum strips in oil, drained
Preparation method
1. Place the pork, feta, parsley, breadcrumbs, fennel and garlic in a bowl. Season with salt and black pepper; mix thoroughly to combine. Shape mixture into 4 thick patties. Cover; chill for 30 minutes.
2. Preheat your barbecue or char-grill to moderate. Lightly spray the burgers with oil. Cook for 4-5 minutes each side or until tender. Stack patties over lettuce and onion on rolls and top with strips of capsicum.
To check the flavour of the raw mixture, cook 1⁄2 tablespoon in a small frying pan then taste and adjust seasonings before shaping patties. Add a pinch dried chilli flakes for heat if you like. This is good with chicken mince, too.
