Mini meatloaves

Ingredients

  • Olive oil spray
  • 2 teaspoons olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 500g pork mince
  • 500g veal mince
  • 2 teaspoons finely chopped fresh rosemary leaves
  • 2 tablespoons chopped stuffed green olives
  • 1 cup fresh soft breadcrumbs
  • 1 egg, lightly beaten
  • 1 tablespoon tomato sauce
  • 8 slices prosciutto (or thin streaky bacon)
  • 8 x 3cm rosemary sprigs
  • Bought tomato chutney, to serve

Preparation method

1. Preheat oven to 180°C/160°C. Lightly spray the 8 cups of a mini loaf tray with oil. Heat olive oil in a non-stick frying pan over moderate heat. Cook onion for 4 minutes, stirring, until soft. Add garlic; cook for 1 minute. Cool slightly.

2. Place onion mixture in a large bowl. Add mince, rosemary, olives, breadcrumbs, egg and tomato sauce; season with salt and black pepper. Mix well, using hands, until combined.

3. Line each loaf pan with a slice of prosciutto, overhanging the two long sides. Divide mince mixture into 8 portions and press into pans. Fold prosciutto over mixture, overlapping. Insert a rosemary sprig into top layer to secure.

4. Bake for 30 minutes. Cool in pans for 5 minutes. Drain off fat, then carefully lift loaves out onto a plate. Cool to room temperature. Serve with chutney.
Use very thin streaky bacon (rind removed) instead of prosciutto if you like, but the results will have more fat. Make the day before and refrigerate overnight in the container in which you plan to transport them.
