Ingredients
12 medium green prawns, peeled and de-veined (tails on)
1 clove garlic, chopped
1 red chilli, seeded and chopped
4 kaffir lime leaves, shredded
2 tsp honey
ASIAN SALAD:
1 cup Chinese cabbage, shredded
½ cup snowpea sprouts
½ telegraph cucumber, shaved
2 shallots, sliced on diagonal
¼ cup mint leaves
2 tbs lime juice
2 tbs sweet chilli sauce
Preparation method
Place the garlic, chilli, lime leaves and honey in a bowl with the prawns and stir to combine. Cover with plastic wrap and refrigerate for 30 minutes. Heat a barbecue or char-grill pan over medium heat and cook the prawns for one to two minutes each side or until cooked through. Place all the salad ingredients in a large bowl and toss. To serve, divide the salad between two bowls, top with the prawns and a wedge of lime. Serves 2
