Prawn, avocado and papaya cocktails

Ingredients

  • 2 avocados, peeled, sliced into wedges
  • 1 papaya, peeled, seeded, sliced into wedges
  • ¼ small iceberg lettuce, sliced into thin wedges
  • 1kg cooked medium prawns, peeled, deveined, tails intact
  • 1/3 cup coriander leaves
  • lime wedges, to serve

Dressing

  • ¼ cup (60ml) lime juice
  • ¼ cup (60ml) light olive oil
  • 1 tablespoon sweet chilli sauce
  • 1 teaspoon fish sauce

Preparation method

1. To make Dressing, whisk all ingredients together in a jug. Set aside.

2. Arrange avocado, papaya, lettuce, prawns and coriander in small glasses. Drizzle with Dressing and serve immediately with lime wedges.
