Creamy garlic prawns

Ingredients

  • 1 tablespoon olive oil
  • 30g butter
  • 2 garlic cloves, crushed
  • 1 long red chilli, sliced
  • 1 teaspoon mild curry paste
  • 500g green prawns, peeled, deveined,
  • tails intact
  • 2 green onions,
  • sliced, plus extra, shredded
  • 300ml carton cream
  • steamed rice,
  • to serve

Preparation method

  1. Heat oil and butter together in a large frying pan on high. When bubbling, add garlic and chilli, and saute for 1-2 minutes.

  2. Stir in curry paste and cook for 30 seconds, stirring. Add prawns and onions, stirring for 2-3 minutes, until prawns begin to colour.

  3. Pour in cream and bring to the boil. Reduce heat and simmer for 1-2 minutes, until sauce has thickened and prawns are cooked through. Season, to taste.

  4. Serve with rice, topped with shredded green onion.


TOP TIP
  • You can use a combination of prawns and scallops if you like.
  • For a low-fat version, use light evaporated milk. It will need a little thickening with cornflour.
