Ingredients
1/3 cup (80ml) mirin
¼ cup (70g) white miso
1 teaspoon sugar
4 x 125g salmon fillets
2 bunches asparagus, trimmed
1 bunch green onions (shallots), trimmed
steamed rice, to serve
kJ 1280, fat 10g, sat fat 2g.
$8.65 per serve
Preparation method
1. Combine mirin, miso and sugar in a shallow bowl. Add salmon fillets and turn to coat.
2. Meanwhile, preheat a grill on medium and line grill tray with foil. Spray asparagus and green onion lightly with cooking oil spray.
3. Drain salmon pieces and arrange on foil with asparagus and onion. Grill for 5-10 minutes, turning once, until tender and fish flakes easily. Serve with steamed rice.
