Pasta with Italian sausage

Ingredients
3 cups (250g) penne pasta
150g packet baby spinach
500g thin sausages, any flavour
1 tablespoon olive oil
130g can corn kernels, drained (or use frozen)
1⁄4 cup toasted pine nuts
1⁄2 cup grated fresh parmesan
Preparation method
1. Cook pasta in plenty of boiling, salted water for 8-10 minutes until tender but still firm to the bite. Drain, reserving about 1⁄4 cup cooking water. Return pasta and water to pan; stir through spinach until wilted.
2. Meanwhile, squeeze sausage meat from casings; break into small chunks and roll into balls. Heat oil in a non-stick frying pan over moderate heat. Cook meatballs for 4-5 minutes, stirring, until cooked and golden. Add corn and pine nuts to pan; season to taste with salt and black pepper.
3. Stir sausage mixture and half the parmesan through pasta. Sprinkle servings with remaining parmesan.
Choose your favourite sausages; slit casings down the length to remove sausage mince. Use wet hands to shape balls.
