Ingredients
1kg thick sausages, any flavour
810g can whole peeled tomatoes
1 teaspoon dried basil leaves
1 tablespoon packed brown sugar
1 tablespoon balsamic or red wine vinegar
80g baby spinach leaves
1⁄2 cup grated tasty cheese
Garden salad, to serve (optional)
Preparation method
1. Preheat oven to 180°C/160°C fan forced. Prick each sausage once or twice; place in a large, deep frying pan. Cover with water; bring to the boil over moderate heat, then drain. Place sausages in a large baking dish.
2. Place tomato, basil, sugar and vinegar in a bowl; mix to combine, slightly crushing the tomatoes. Spoon the mixture evenly over the sausages.
3. Bake uncovered for 20-25 minutes, until the sausages are cooked. Stir spinach through sauce and sprinkle with cheese. Bake 5 minutes more until cheese melts. Serve with salad.
This is a good “bring-a-plate” main. Choose your favourite gourmet sausages, then add a condiment or spice blend to the tomatoes. Stretch this meal by serving with cooked rice, pasta, polenta or mash.
