Ingredients
24 scallops without roe (600g)
1 medium lemon (140g), cut into eight wedges
cooking-oil spray
80g mesclun
lemon tarragon dressing
2 tablespoons lemon juice
1 teaspoon olive oil
2 teaspoons finely chopped fresh tarragon
1 teaspoon dijon mustard
Preparation method
Thread one lemon wedge onto each of eight bamboo skewers. Thread scallops onto skewers.
Make lemon tarragon dressing.
Spray heated barbecue grill plate with cooking-oil spray for 2 seconds. Cook skewers about 1 minute each side or until cooked as desired.
Serve scallops with lemon tarragon dressing and mesclun.

Combine ingredients in screw-top jar; shake well.
