Ingredients
125g packet light cream cheese, softened
1 tablespoon icing sugar, plus extra, to dust
6 sheets fillo pastry
Light olive oil cooking spray
1 punnet strawberries, hulled, sliced (or use mixed berries)
Extra berries, to serve
Low fat ice-cream, to serve (optional)
Preparation method
1. Place cream cheese and icing sugar in a small bowl; beat well until smooth. Cover; refrigerate.
2. Preheat oven to 200°C/180°C fan forced. Line two baking trays with baking paper. Lightly spray each fillo sheet with oil; arrange in a stack on a flat surface. Cut stack in half lengthwise, then cut each half into quarters to make 8 stacks. Arrange on prepared trays; lightly spray with oil. Bake for 10 minutes until crisp and golden.
3. To serve, place a stack on each of 4 serving plates. Top each with dollops of cheese mixture and 1⁄4 of the berries. Cover with another fillo stack; dust with icing sugar. Serve with extra berries and ice-cream.
Store baked fillo pieces in an airtight container; fill just before serving. If fresh berries are not available, use a 440g can of fruit or fruit salad, drained.
