Pretty butterfly cake

Ingredients

  • Butter Frosting
  • Food colours, as desired
  • 350g pack (2) round unfilled, un-iced sponge layers
  • 250g pack (6) ready-made chocolate or jam rollettes
  • 2 musk sticks (or use chocolate biscuit sticks)
  • Multi-coloured fruit sticks, cut into thin strips
  • 2 Smarties
  • Marshmallow flowers, to decorate

Preparation method

1. Prepare frosting by creaming 125 grams of butter using an electric mixer for 3 minutes, until it turns white. Colour as desired.

2. Gradually beat in 1 cup of sugar, then 1 tablespoon of milk, then another cup of sugar. Join sponge rounds together with a little of the frosting. Cut layers in half through the top to make two half-circles.

3. Use the sponge layers and the rollettes to create the butterfly shape, following the instructions in the tips box, right. This box also tells how to add bright party touches to the cake board.

4. Be creative with food colour. Blend 2 or more colours to tint 1⁄4 of remaining frosting a dark colour; spread over body. Using different colours, tint remaining frosting in a lighter hue; spread over wings. Decorate wings with fruit stick strips. Use musk sticks for feelers and Smarties for the eyes.
This cake uses 5 of the rollettes; serve remaining rollette, sliced, separately.
